     Hi-Dex Cattle are a cross between a Scottish Highland and an Irish Dexter.  These cattle are a small homestead cow, only needing 1/2-3/4 of an acre per head.  Both breeds come in solid colors, ranging from Black, Red, and Dunn (Light Brown or Gold).  Both breeds are very docile and friendly.  They love "their" people.  The Hi-Dex cross is a perfect cross between these two well loved breeds.  Hi-Dex cattle offer our homestead families, cattle that requires little pasture, premium meat, high fat content milk, and a family friendly disposition.  The average full grown weight of a Dexter Steer is 800-900lbs.  This is a perfect weight for 1-2 family/families for about one to one and a half years of meat.  Hi-Dex beef is a breed of cattle that is known for its quality and taste. It is a smaller breed of cattle, which means that the meat is lean and has less marbling than other types of beef.  Being so lean means that the meat from Hi-Dex cattle is lower in saturated fat and a good, healthier choice for those who are watching their weight and/or cholesterol levels. The meat from Dexter beef is also high in protein and iron, which are essential nutrients for our bodied.  Hi-Dex beef has a unique flavour character with a rich, beefy taste that’s unlike other beef.
